How to make Alpha-Gal Friendly Chocolate Chip Cookies

Alpha-Gal Friendly Chocolate Chip Cookies

Delicious chocolate chip cookies that are dairy free, Alpha-Gal friendly, and perfect for freezer storage.

Dry Ingredients

  • 2 Cups + 2 TBS All-purpose flour
  • 3/4 tsp Salt
  • 3/4 tsp Baking Soda
  • 1/2 cup Vegan "milk" chocolate chips (organic, *Azure Standard brand)

Wet Ingredients

  • 1/2 cup Coconut oil (Organic, refined )
  • 1/2 cup Sugar (Organic)
  • 1/2 cup Brown sugar (Organic)
  • 1 large Egg
  • 1 Tbs Vanilla
  1. Preheat oven to 350 degrees

  2. Whisk together flour, baking soda, and salt in a medium bowl. Set aside.

  3. Cream your coconut oil and sugars

  4. Once well creamed, add egg and vanilla. Mix only long enough to combine.

  5. Turn off mixer and add half of your flour mixture.

    (Tip: Use a wooden or rubber spatula to incorporate to avoid a mess when turning the mixer back on.)

  6. Mix until combined, then add the rest of the flour to your mixer. Mix only until combined, do not over mix.

  7. Add chocolate chips and mix briefly on low speed, or by hand just long enough to incorporate the chocolate chips.

  8. let the dough to rest while you line a cookie sheet with parchment paper

  9. Roll into 1 1/2 Tbs size balls, put desired amount on cookie sheet and bake for 10-12 minuets.

    (Tip: for freezing, place on cookie sheet and put in freezer until frozen. Once frozen, put into a ziplock bag or freezer safe container.)

  10. Allow to cool on cookie sheet for 1 to 2 minuets, then move to cooling rack.

*If baking from frozen, bake at 325 degrees for 17 to 20 minuets.
